Coarse Bulgur + Farmili Ajwain
Coarse bulgur slowly softens into a rich, comforting texture, while ajwain adds warmth and digestive balance that makes every spoonful feel nourishing and grounding.
Ingredients
- 1½ cups coarse bulgur
- ½ cup moong dal
- 2 tbsp desi ghee
- ½ tsp Farmili Ajwain
- 1 onion, chopped
- 1 tsp ginger, grated
- 3 garlic cloves, minced
- 1 carrot, diced
- ½ cup green peas
- ¼ tsp turmeric
- ½ tsp black pepper
- Salt to taste
- Warm water, as needed
- Fresh coriander, for garnish
- Homemade curd, for serving
Method
Step 1 — Wash & Prepare
Wash the coarse bulgur and moong dal together thoroughly and keep aside.
Step 2 — Build the Base
Heat desi ghee in a heavy-bottomed pot. Add Farmili Ajwain and allow it to release its aroma gently into the ghee.
Step 3 — Sauté the Aromatics
Add chopped onions, grated ginger, and minced garlic. Sauté slowly until softened and fragrant.
Step 4 — Add Vegetables & Spices
Mix in the diced carrots, green peas, turmeric, black pepper, and salt. Stir gently for a few minutes.
Step 5 — Slow Cook
Add the washed bulgur and moong dal mixture into the pot and combine everything well.
Pour in warm water as needed and cook covered on low heat until the khichda turns soft, creamy, and comforting.
Stir occasionally to prevent sticking and to maintain the rich texture.
Step 6 — Serve Warm
Garnish with fresh coriander and serve hot with homemade curd on the side.
