Extra Coarse Bulgur
Extra coarse bulgur keeps its texture beautifully during baking, making it ideal for stuffed vegetables and hearty oven-baked meals.
Ingredients
- 1½ cups extra coarse bulgur
- 4 large bell peppers
- 1 tbsp Farmili Low Pungency Yellow Mustard Oil
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, chopped
- 1 cup mushrooms, finely chopped
- 1 cup spinach, chopped
- ¼ cup fresh parsley, chopped
- ½ tsp black pepper
- ½ tsp roasted cumin powder
- Salt to taste
- Warm vegetable stock or water, as needed
- Hung curd, optional for serving
Method
Step 1 — Prepare the Peppers
Cut the tops off the bell peppers and carefully remove the seeds and inner membranes. Keep the peppers upright and ready for stuffing.
Step 2 — Build the Filling
Heat Farmili Low Pungency Yellow Mustard Oil in a pan over gentle heat.
Add finely chopped onions and cook slowly until softened and lightly golden.
Step 3 — Cook the Vegetables
Add garlic, tomatoes, mushrooms, and spinach. Cook gently until the vegetables soften and release their flavors.
Step 4 — Add the Bulgur
Mix in the extra coarse bulgur along with roasted cumin powder, black pepper, and salt.
Pour in a little warm vegetable stock or water and cook partially until the bulgur absorbs some moisture while still remaining slightly firm.
Step 5 — Finish the Stuffing
Turn off the heat and fold in the fresh parsley for brightness and freshness.
Step 6 — Stuff & Bake
Fill the prepared bell peppers generously with the bulgur mixture and place them upright in a baking dish.
Add a little water to the base of the dish to keep the peppers moist while baking.
Cover and bake until the peppers become tender and the filling is fully cooked.
Step 7 — Serve Warm
Serve hot with hung curd on the side if desired.
