Medium Bulgur
Medium bulgur cooks quickly while still holding a gentle bite, making it perfect for warm grain bowls, light pilafs, and everyday Mediterranean-style meals.
Ingredients
- 2 cups medium bulgur
- 2 tbsp Farmili Low Pungency Yellow Mustard Oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 1 small zucchini, diced
- 1 yellow bell pepper, diced
- ½ cup cooked corn
- 1 tsp lemon zest
- 2 tbsp lemon juice
- ½ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- ¼ tsp Farmili Saunf, lightly crushed (optional)
- ½ tsp black pepper
- ½ tsp roasted cumin powder
- Salt to taste
- 3 cups warm water or vegetable stock
- Crumbled feta or hung curd, optional for serving
Method
Step 1 — Sauté the Base
Heat Farmili Low Pungency Yellow Mustard Oil in a wide pan over medium heat.
Add finely chopped onions and cook gently until softened and lightly translucent.
Step 2 — Cook the Vegetables
Add minced garlic, diced zucchini, and yellow bell peppers.
Cook slowly until the vegetables become lightly tender while still keeping their vibrant colour and freshness.
Step 3 — Toast the Bulgur
Add the medium bulgur to the pan and stir gently for a minute, allowing the grains to absorb the flavours and aromas.
Step 4 — Simmer Until Fluffy
Pour in warm water or vegetable stock.
Season with salt, roasted cumin powder, black pepper, and optional lightly crushed Farmili Saunf.
Cover and cook on low heat for 10–12 minutes until the bulgur becomes soft, fluffy, and fully cooked.
Step 5 — Rest & Finish
Turn off the heat and allow the bulgur to rest covered for 5 minutes.
Fluff gently with a fork and fold in lemon zest, lemon juice, chopped parsley, fresh mint, and cooked corn.
Step 6 — Serve Fresh
Serve warm with crumbled feta or a spoonful of hung curd if desired.
